After celebrating their tenth anniversary, revered haute Beijing eatery Phillipe is set for their second decade of fame under the new leadership of President, John Villa. Villa, President of Phillippe, will lead the franchising efforts and oversee the operations and strategic development for the global brand. Having worked as the Executive Corporate Chef at some of NYC’s most popular high-end grossing restaurants including: TAO, Tropica, Le Cirque, Judson Grill, Boathouse, Dominic and Pico, among many other successful establishments, his talent in the kitchen is matched by his business acumen, which quickly rose through the ranks.
On a summer Friday evening when most Upper East Side restaurants are quiet, Philippe was booming with local neighbors, families and the usual bevy of loyal noteworthy guests that frequent this hotspot. Mastering the art of Beijing style cuisine, Chef Philippe Chow has spent the last 30 years in some of the most sought after kitchens in the world, as he draws upon his classical training to create modern renditions of Asian classics to appeal to a discerning American palette. His regular A-list celebrity guests include: Mariah Carey, Rihanna, Kobe Bryant, and Carmelo Anthony, to name a few, who indulge in his famous signature crave worthy dishes such as Chicken Satay with peanut sauce and Peking Duck. While all of their guests are treated like VIPs, some of the high profile clientele comprised of moguls, CEOs, politicos and celebrities who value their privacy, choose to dine in one of the private dining rooms such as the Wine Cellar or Marquis Room for a unique and intimate experience downstairs..
While these flavorful and delicious dishes clearly speak for themselves, some of the other must have signature dishes include the Chicken Lettuce Wraps, Pork Soup Dumplings, Beijing Chicken, House Filet Mignon, Nine Seasons Spicy Prawns, and Maine Lobster with ginger, scallions, and cracked black pepper. While everything is served family style, one can dine in a group to truly enjoy the array of flavors that shine through in Chef Philippe Chow’s culinary masterpieces.
Under John Villa’s vision, he plans to refresh the interior with minor touches to give their space more of an “in-vogue,” contemporary look to reflect the grandeur of the cuisine. Married to an Emmy award winning movie set decorator, Regina will spearhead the project with touches of glamour and sumptuous fabric drapes and wall coverings to bring an understated elegance and warmth to the main areas. As John Villa’s track record has proven to elevate culinary hotspots, expect to see his Midas Touch to shine through as he brings the Philippe brand to global heights in the near future.
