At rising star in his own right, at only 24 Chef Carlos Estarita has cooked for some of the most famous kitchens in the world and trained under celebrity chef James Berckemeyer in Lima, Peru and brings an exotic flair to the kitchen. To keep the libations flowing, Global Beverage Director James Shearer has created a bespoke cocktail menu that complements the Latin and Asian inspired dishes. Drinks such as The Nikkei Spritz, Lychee Martini, and Apple & Shiso Mojito as well as a selection of mezcals, pisco, and Asian spirits are part of the eclectic and vibrant beverage program. The centerpiece of the warm and inviting 5,200 square foot dining room is the open kitchen that showcases the culinary talents of the chef’s team while engaging diners.
