Experience the delicious bounties of the island under the direction of James Beard winner Chef Allen Susser, who incorporates fresh seafood along with locally grown produce from the island and their own organic Emerald Farm. Guests can dine under the stars at the Celestial Terrace on the top level that offers sweeping panoramic views of the Caribbean Sea and Pitons for daily sunset cocktail parties or stargazing. For a romantic alfresco candlelight experience, dine in your own sanctuary or at the breezy Jade Mountain Club that serves a delicious selection of international cuisine with a Caribbean flair. Nightly themed menus are also available that incorporate seasonal ingredients in savory and sweet creations like the multi-course Mango Madness. Make your own chocolate masterpieces with the resort's chocolate alchemist at the onsite Chocolate Laboratory. They use raw cocoa sourced from the property's land.

Activities at Anse Chastenet

Enjoy the amenities of this 600-acre estate at their more casual beachfront sister property Anse Chastanet, which was the first property to be built on this secluded enclave. Snorkel in the crystal blue waters off the adjacent Anse Mamin Beach and indulge in a casual beachside lunch at the Jungle Beach Bar and Grill that serves grilled specialties and tropical cocktails inspired by the island. Excursions around St. Lucia

For the best panoramic views of the Pitons and St. Lucia, visit the Tet Paul Nature Trail. This 45-minute guided hike will take you past exotic horticulture, an organic farm, and "The Stairway to Heaven." From the top, you can see the neighboring islands of Martinique and Saint Vincent, the majestic Pitons, and the gorgeous Southern side of St. Lucia.

Further down the road is the famous Sulphur Springs, which originated from a volcano that erupted in 1700. Considered to be nature's spa, A-List celebrities, locals and tourists visit the springs to reap the detoxifying benefits of the mud baths, which are purported to make you look 12 years younger. The natural minerals from the earth help tighten skin, heal sun burns, and relieve eczema, arthritis, sore joints and more. After the mud bath, wash off under a waterfall in a refreshing natural rainforest bath.
