This Fourth of July weekend, Four Seasons Resort and Residences Anguilla is offering more than fireworks and ocean views—it’s serving up a bold cross-cultural dining experience led by celebrated guest chef Karan Gokani. From July 4 through 6, the award-winning co-founder of London’s Hoppers joins Executive Chef Manu Calderon for a limited-time beachside pop-up at Half Shell Beach Bar, where Indian spice meets Mexican soul in a menu designed to surprise and share.

The collaboration weaves together the culinary signatures of two cultures known for their intensity of flavor and communal dining. “His creativity and depth of flavor align beautifully with our passion for delivering unique and memorable moments,” said Executive Chef Calderon. The menu fuses Indian street food energy with the coastal ease of Mexican cooking—making it right at home steps from the Caribbean surf.

A Shared Table of Tradition and Innovation

The pop-up menu unfolds with inventive starters like jackfruit cutlets paired with habanero chutney and chaat-spiced Mexican elotes. For mains, guests can dig into dishes meant for sharing: banana leaf-wrapped fish, tender goat curry tacos, and a decadent spiny lobster hodi—one of the highlights of the experience. The goal isn’t just fusion—it’s flavor-forward storytelling.
