On February 7th, the acclaimed Estiatorio Milos by Chef Costas Spiliadis will debut in the prestigious One Flagler building, bringing world-class Greek cuisine to the city’s sought-after waterfront district. This marks Milos’ second Florida outpost and twelfth location worldwide, reinforcing the brand’s reputation as a global authority on refined Mediterranean dining.

Founded in Montreal in 1979, Estiatorio Milos has set the standard for fine Greek dining, known for its impeccably sourced seafood, seasonal produce, and traditional flavors. At the heart of the Milos experience is philoxenia, the Greek philosophy of warm hospitality, ensuring that every guest feels like family.

At Milos West Palm Beach, the fresh fish market takes center stage, offering guests the opportunity to select from the rarest Mediterranean seafood, displayed on crushed ice and prepared to their preference—grilled, baked in sea salt, or as delicate sashimi. Other signature dishes include:

• Whole Fish baked in sea salt or grilled, highlighting Milos’ commitment to purity of flavor.
