  • Joyuda-Style Octopus – A dish inspired by Lugo’s childhood on Puerto Rico’s west coast, featuring thinly sliced octopus, olive aioli, avocado, lime, sweet peppers, and cilantro.

  • Mero en Caldo Santo – Paying tribute to Loíza’s traditional coconut-based fish soup, this dish celebrates the island’s Afro-Caribbean influences with premium local ingredients.

A native of Mayagüez, Lugo’s passion for food was first ignited in his grandmother’s kitchen. His career led him to prestigious restaurants in Puerto Rico and Miami, before he joined the ranks of world-renowned Spanish chef José Andrés in Washington, D.C. Over a decade, Lugo held key positions at acclaimed establishments such as Jaleo, Zaytinya, and China Chilcano, earning recognition on the Michelin Guide blog and participating in industry events like the Stadium Chef Series, benefiting the James Beard Foundation.

Now, Lugo brings his expertise back to Puerto Rico, infusing his native island’s cuisine with refined techniques and global inspiration.
