April 10, 2025 — This May, Four Seasons Hotel Miami will welcome a highly anticipated culinary residency by one of Peru’s most celebrated chefs. NUNA, a refined and modern Nikkei concept by Chef Jaime Pesaque, is set to take over the dinner service at Edge Brasserie, introducing Miami to a limited-time dining experience rooted in Japanese precision and elevated by the bold spirit of Peruvian cuisine.
With his flagship restaurant Mayta in Lima ranked on The World’s 50 Best Restaurants, Chef Pesaque is widely recognized as a leader in the evolution of contemporary Peruvian cooking. At NUNA, he distills years of global influence and local tradition into a menu that’s thoughtful, ingredient-driven, and distinctly his own.

Nikkei Cuisine, Reimagined in Brickell
Set within the Four Seasons Hotel Miami at 1435 Brickell Avenue, NUNA’s debut is more than a pop-up—it’s a carefully curated cultural expression with a defined point of view. The name itself nods to "soul" in Quechua, the ancestral language of the Andes—a reflection of the intention behind every element, from the composition of the dishes to the energy of the space.
On the menu, expect a refined lineup of ceviche, sushi, yakitori, and warm plates that showcase premium global ingredients and a mastery of contrast. Highlights include:
Ceviche Limeño with corvina, leche de tigre, sweet potato, and cilantro
The NUNA Roll, featuring tuna, acevichado sauce, avocado, and crispy shrimp
Saltado al Wok, a striking stir-fry of Wagyu beef and lobster in Nikkei-style seasoning
Each plate is designed to be clean yet complex, offering an interplay of texture, umami, acidity, and spice that unfolds slowly, with purpose.
A Beverage Program with Global Depth
In harmony with Pesaque’s dishes is a curated bar menu featuring Japanese whiskies, sake, pisco, and a selection of signature cocktails and mocktails. This isn’t just a pairing—it’s a palette extension, conceived to amplify and balance the menu’s layered flavors.
NUNA will also offer select dishes on Edge’s Executive Lunch menu, offering a taste of the concept’s artistry for daytime diners.

Born and raised in Peru, Chef Pesaque trained in Europe and apprenticed in Michelin-starred restaurants in Italy and Spain, including El Celler de Can Roca.
