Founder Carlos Suarez explains, “We want Rosemary’s to feel like home—a place where good taste, good food, and genuine connection thrive. With my family having called Miami home for two decades, this feels like a full-circle moment.”

Named after Suarez’s mother, Rosemary’s is a heartfelt homage to her home-cooked meals and vegetable garden in Lucca, Italy. Her warmth and culinary traditions inspired the restaurant’s ethos, which has garnered acclaim across its New York and Tokyo locations.
