Hai Hospitality Brings Chef Tyson Cole’s Nontraditional Japanese Cuisine to 17xM in Late 2025

Washington, D.C. is set to welcome a new culinary heavyweight as Hai Hospitality announces the expansion of Uchi, the celebrated James Beard Award-winning Japanese restaurant, into the city’s Central Business District. A Natural Evolution for Uchi

Founded in 2003 by Chef Tyson Cole, Uchi—meaning “house” in Japanese—has redefined modern Japanese cuisine through an innovative approach that blends traditional techniques with unexpected flavors and contemporary presentations. Now, with seven locations nationwide, the restaurant is embarking on its next chapter in one of the country’s most influential cities.

“Expanding to D.C. is an incredible opportunity for us to continue evolving while staying rooted in what makes Uchi special. Each Uchi location is shaped by the energy and character of its city, and we’re excited to immerse ourselves in D.C.’s dynamic culture.”

A Space That Balances Tradition and Modernism

Designed by a collaborative team including Zebra, Islyn Studio, and design partner KPF, Uchi D.C. will embrace a “new modernism” aesthetic, drawing inspiration from its neighbor, the National Geographic Museum of Exploration. The design will also weave in elements from the acclaimed 2000 Hong Kong film In the Mood for Love, infusing the restaurant with theatrical vignettes of space and cinematic lighting motifs.

The 185-seat space will include:

  • A sleek sushi counter with 14 seats, offering an intimate omakase experience.

  • A 18-seat bar, serving craft cocktails and a curated sake selection.

  • Two private dining rooms, which can be separated or combined for intimate gatherings.
