Maya Restaurant’s Exotic Guacamole Festival

Since the 16th century, the Aztecs have been enjoying the decadent and delicious flavors of fresh guacamole using the heart healthy avocado.  To celebrate this perennially favorite dip, Top Chef Richard Sandoval has created the Guacamole Festival that runs from July 1 to September 30, at his Modern Mexican Kitchen and Tequileria, Maya, that features different flavors representing various regions in Mexico.  This simple base of avocado, onion, chilies, fresh tomato, and salt has grown to incorporate thousands of seasonal variations.  One way to taste a variety of flavors is to try the Guacamole Tostada sampler with Baja, Pacifico & Sur guacamoles with mini tostadas and a variety of spicy salsas.

For more regional options, consider the Traditional made with avocado, tomato, onion, cilantro, and chile serrano; the Baja, with flavors from Baja California including kiwi, jicama, strawberry, mango, mint, chile arbol, lime, and sea salt; Pacifico with grilled beet,  roasted walnut, queso fresco, diced orange and Richard Sandoval's citrus chipotle salt and lime juice; Sur, with flavors from the South including grasshoppers, tomatillo, cotija cheese, onion, chile cascabel, cilantro, lime, and sea salt. Guacamole Festival also highlights the flavors of: Bacon, with chicharron, pickled chile, and cojita cheese; Tuna Tartare, with serrano, chipotle, sesame seed, wonton, and jicama salad; and Spicy Crab, with chipotle, lime, and cilantro. Featured guacamoles will range in price from $10 to $16.
