On February 11th, Chef Thomas Keller’s acclaimed Bouchon Bistro in Coral Gables will host a remarkable evening celebrating the life and legacy of Chef Paul Bocuse—one of the most transformative figures in modern gastronomy. More than just a tribute to a culinary legend, this event underscores a greater purpose: supporting the Foundation Paul Bocuse, an organization dedicated to nurturing the next generation of culinary talent worldwide.

A Philanthropic Feast Honoring a Culinary Icon

At its heart, this event is a celebration of Chef Bocuse’s lifelong commitment to mentorship and excellence in the kitchen. Known as the "Father of Nouvelle Cuisine," Bocuse’s work elevated French culinary traditions and paved the way for a new era of gastronomy. Chef Keller, a close friend and admirer of Bocuse, aims to carry forward his mentor’s vision through this special evening.

The event’s $150 prix-fixe menu is as much about preserving Bocuse’s culinary legacy as it is about giving back. A portion of the proceeds will directly benefit the Foundation Paul Bocuse, which provides training, scholarships, and opportunities to young chefs across the globe. By dining at this exclusive event, guests become part of a global effort to inspire and support future culinary leaders.

The Menu: A Culinary Journey Through History

Filet de Bœuf Rossini

Each course of the evening’s menu pays homage to Chef Bocuse’s unparalleled contributions to French cuisine:

  • Soupe aux Truffes Noires V.G.E.: A dish of both historical and culinary significance, this black truffle soup was originally served to French President Valéry Giscard d’Estaing at the Élysée Palace in 1975, the night Bocuse received France’s highest decoration, the Légion d’Honneur.

  • Filet de Bœuf Rossini with Sauce Périgueux: A quintessential Bocuse creation, this entrée pairs filet of beef with seared foie gras, pommes fondant, spinach purée, and a rich périgourdine sauce, embodying the artistry and elegance of his cooking.

  • Tarte Tatin: This French classic of caramelized apple tarte served with vanilla ice cream showcases the timeless simplicity and perfection that defined Bocuse’s work.

Supporting a Vision Beyond the Kitchen

More than a celebration of fine dining, the evening serves as a reminder of Bocuse’s dedication to fostering a sense of community within the culinary world. The Foundation Paul Bocuse embodies his mission to pass on knowledge, skills, and passion to the next generation. By attending, guests contribute directly to programs that empower aspiring chefs to dream, create, and succeed.
