One Night, Two Icons, Infinite Flavor

In a move that underscores Miami’s culinary momentum, Giselle Miami is bringing together two of TRP Hospitality’s most celebrated concepts—Giselle and Rosa Sky—for a single-night event that’s already generating buzz among industry insiders and discerning diners alike. On Wednesday, July 23, Executive Chef Gustavo Zuluaga of Giselle and Chef Andre of Rosa Sky will join forces for the latest installment of the Giselle Guest Chef Series, delivering a fully co-created à la carte menu at Giselle that’s anything but ordinary.

It’s a rare cross-pollination of culinary identities—where downtown glamour meets rooftop experimentation, and Miami’s late-night flair is folded into fine-dining artistry. Each dish was conceived collaboratively, allowing the chefs’ distinct voices to speak in harmony through flavor, texture, and plating.

A Menu That Marries Technique and Play

Among the featured offerings, the Florida Snapper Crudo makes an impression with its multi-layered balance: avocado espuma, pomelo-grapefruit vinaigrette, and star fruit crisps coalesce into a plate that feels both seasonal and precisely executed. It’s paired with The Rosa Sky, a cocktail of Grey Goose Strawberry & Lemongrass Vodka, citrus, and rose-infused ice—a nod to the rooftop bar’s flair for visual and flavor-forward mixology.

For something more grounded—and slightly wild—diners can opt for the Smoked Octopus BBQ Taco, tucked into a purple corn tortilla and layered with tamarind glaze, mango-pineapple chutney, and summer greens mole. It’s a study in contrasts: sweet, smoky, acidic, and rich—fitting for a city where heat and cool coexist by design.

More Than a Menu, a Creative Exchange

What makes this installment especially compelling is the spirit of mutual admiration and creative energy between the two chefs.

“The fun and creative moment that each dinner is made with is what makes this series so unique. Combining inspirations from different chefs makes it special.”
Executive Chef Gustavo Zuluaga of Giselle

Chef Andre echoes the sentiment:

“The aromas, the plating, and the overall vibe of the dishes at Giselle is something I draw inspiration from... I’m excited, even just for one night, to be a part of a team that accomplishes that every day.”
Chef Andre of Rosa Sky

The event marks the first-ever culinary collaboration between Giselle and Rosa Sky, following recent recognition in the Best of Miami 2025 Awards—Giselle for Best Late Night Dining and Rosa Sky for Best Rooftop Dining. That dual recognition makes this moment feel not just celebratory, but inevitable.

Details Worth Booking

With limited seating and an already growing waitlist, July 23 is shaping up to be one of the season’s most anticipated dining events. For those familiar with either venue’s high standard of culinary artistry, this joint effort offers something altogether new—proof that collaboration can elevate experience when it’s done with intention.
