The high-energy finale of Carnival has found its way to the shores of South Beach. On August 7, 2025, Las’ Lap Miami opens at The Daydrift Hotel, marking the first expansion of the beloved New York City rum bar. This new chapter pairs the brand’s celebrated West Indian roots with the culinary vision of acclaimed chef and partner Kwame Onwuachi, introducing a fresh dining destination where the coastal rhythm of Miami meets the exuberance of the Caribbean.
While the Lower East Side original is known for its intimate scale, standout rum program, and cultural storytelling, the Miami iteration offers a different kind of stage. It’s lighter, more expansive, and fully in step with the oceanfront energy that surrounds it. Inspired by the name Las’ Lap—a nod to the final, joy-filled hours of Carnival—the concept channels togetherness, celebration, and a sense of arrival.
“The decision to bring Las’ Lap to Miami was a natural evolution for the brand. West Indian culture already runs deep in the city’s food, music, and spirit. Las’ Lap fits into that cultural fabric while adding something distinct.”Bryce Sheldon, Las’ Lap Partner
That distinction comes in part from Onwuachi’s deep personal connection to the concept. With family roots stretching from Trinidad to Nigeria and Jamaica, he saw an opportunity to weave his heritage into a South Beach dining room designed for connection.
"Everything about this space was intentional. I’ve always been drawn to places with personality and purpose. Partnering with the Las’ Lap team made sense—our visions aligned, and I'm able to honor my grandfather's heritage here as well. This intimate setting adds something new to South Beach. It’s low-key, late-night, and detail-driven. It just felt right.”Chef Kwame Onwuachi
Onwuachi’s food menu reflects both the vibrancy of Carnival and Miami’s tropical abundance. Expect dishes like Escovitch Crab Claws with pickled white onion and carrot, South Beach Snapper with guacamole and tostones, and Oxtail Cuban layered with beef bacon and gherkin. Caviar service arrives with freshly made roti, while Jerk Mushroom Yakitori—prepared with king oyster mushrooms and Caribbean tare—brings plant-forward balance. For indulgence, Wagyu Griot with pikliz and green aioli offers rich complexity, while seasonal gelatos and tropical sorbets close the evening on a cool, refreshing note.
The beverage program remains central to the Las’ Lap identity. Guests can explore what is poised to be Miami’s most comprehensive rum selection, spanning storied Jamaican and Trinidadian distilleries, rare Brazilian cachaças, and curated finds from Japan. The cocktail menu blends precision and personality, featuring both the “OG ‘Lap” favorites and Miami exclusives.
Signatures include the Las’ Lap Punch with white and aged rum, citrus, and house grenadine; Smoke on the Water with mezcal, fresh watermelon, and ginger; and Palma, a coastal-leaning mix of coconut-infused rum, pineapple, lime, and saline. Playful twists like the Spicy Melon Margarita and Bird’s Eye View add bright, seasonal notes that feel right at home under the Miami sun.
The interiors carry the richness and layered personality of the original Las’ Lap but are adapted for South Beach’s light and scale. Plum-hued wallpaper, patinated mirrors, and velvet banquettes create warmth, while tropical greenery and sunset-soft light blur the boundary between indoors and out. The crystallized marble bar serves as the room’s anchor, flowing onto a lush canal-side patio. Above, a rooftop bar offers panoramic views and high-energy evenings—an elevated perch for sipping rum and watching the city’s rhythm unfold.
Las’ Lap Miami opens August 7, 2025, at The Daydrift Hotel, South Beach. With its thoughtful blend of heritage, hospitality, and culinary craft, it promises to be more than a rum bar—it’s an invitation to step into the spirit of Carnival and stay until the night feels infinite.
