Las Vegas is about to welcome a transformative dining experience—one that blends opulence, artistry, and precision in a space long regarded as one of the most iconic in the country. This fall, CARBONE Riviera will open at Bellagio Resort & Casino, marking a bold new chapter for both the famed CARBONE brand and the city’s fine dining legacy. The concept is a collaboration between Major Food Group and MGM Resorts International, setting the stage for what’s being billed as the most significant seafood restaurant opening in the United States.

Taking over the legendary Picasso dining room, CARBONE Riviera fuses the theatricality and charisma that Major Food Group has perfected across its global empire with a new culinary focus: seafood at the highest level.

A Refined Evolution of a Global Icon

CARBONE Riviera builds on the original CARBONE's wildly successful reinterpretation of Italian-American cuisine—but here, the spotlight shifts to seafood. This isn’t a pivot. It’s an elevation. The restaurant opens with a theatrical display of glistening seafood flown in daily—whole king and Dungeness crabs, oysters, sea urchin (ricci di mare), langoustines, razor clams, and more—arranged on ice like a luxury centerpiece. The menu leans into abundance, without excess. Precision remains the driving force.

Among the dishes are Spicy Lobster Meatballs, intricately prepared seafood offerings, and a standout two-pound Lobster Pasta, alongside a dedicated whole fish program. Options like salt-baked branzino and grilled Dover sole will be finished and presented tableside by captains trained in the CARBONE tradition—refined, engaging, and deeply knowledgeable.

And yes, Spicy Rigatoni Vodka remains a fixture on the menu—only this time, it’s joined by ocean-forward companions designed to dazzle even the most seasoned CARBONE devotee.

A Floating Viewpoint: Bellagio Debuts Riva Yacht Experience

In tandem with the restaurant’s debut, Bellagio will introduce an unexpected new amenity: a custom 33-foot Riva “Anniversario” mini yacht, one of only 18 in existence. Guests will have the rare opportunity to glide across Lago di Como, Bellagio’s man-made lake, in one of the world’s most celebrated watercrafts—all while enjoying unobstructed views of the Fountains of Bellagio.
