Sofitel Rome Villa Borghese is leaning into its moment on screen with a refreshed beverage program at Settimo, the hotel’s rooftop restaurant and bar. Overlooking the Villa Borghese gardens and St. Peter’s Basilica, the setting already carries a sense of occasion. Its recent appearance in Emily in Paris adds a cultural layer that now extends into the glass and onto the plate.
The new menu draws from Italian aperitivo traditions while introducing a series of original cocktails shaped by the show’s aesthetic and the property’s identity.
The beverage program is divided into two directions. Italian Classics revisit familiar aperitivo staples with a creative lens, while Signature Drinks offer original compositions exclusive to Settimo.
Among the highlights, the Pain au Chocolat Negroni and Tiramisu Espresso Martini reinterpret recognizable flavors through a dessert-inspired perspective. The Panettone Fashioned leans into seasonal Italian tradition, translating it into a cocktail format.
At the center of the program is the Trevi Royal, a drink that connects directly to Rome’s iconography. Served in a champagne flute and finished with a chocolate gold coin garnish, it nods to the ritual of tossing coins into the Trevi Fountain. The composition layers Belvedere Vodka, Chambord, crème de cassis, amaro, mezcal, and chilled champagne, finished with a mist of absinthe. The result is a cocktail that feels celebratory without losing its structure.
Executive Chef Giuseppe D’Alessio extends the narrative into the kitchen with Carbonara Tortelli, a dish also inspired by the show.
The preparation takes the essence of classic Roman carbonara and reshapes it into a more refined presentation. The tortelli are filled with a rich carbonara mixture and paired with pecorino foam, crispy guanciale, and seasonal truffle. The dish balances familiarity with technique, maintaining the core flavors while shifting the format into something more composed.
Described as blending Parisian elegance with Roman character, the dish reflects the same duality that defines the overall program.
In an effort to bring the experience beyond the rooftop, Sofitel Rome Villa Borghese has shared recipes for both the Trevi Royal and the Carbonara Tortelli.
The cocktail can be assembled with a pre-chilled blend of spirits topped with champagne and finished with absinthe and a chocolate coin garnish. The tortelli requires a more involved process, from preparing fresh pasta dough to creating a pecorino foam and carefully shaping each piece before cooking.
While the techniques vary in complexity, both recipes offer a way to engage with the hotel’s culinary direction from afar.
Housed in a former 19th-century Roman palazzo, Sofitel Rome Villa Borghese sits within walking distance of landmarks such as the Trevi Fountain, Villa Medici, and the Spanish Steps. The property’s atmosphere reflects a residential sensibility, offering a quieter perspective on the city while remaining closely connected to its cultural core.
Settimo, positioned at the top of the hotel, serves as a natural extension of that identity. With panoramic views and a garden-like setting, it provides a backdrop that complements both the culinary program and its cinematic inspiration.
The updated offerings at Settimo arrive at a time when hospitality increasingly intersects with cultural storytelling. The connection to Emily in Paris may draw attention, but the substance lies in how that inspiration is translated into the experience itself.
